Observed the following items above 41°F in the walk-in cooler during the course of the inspection: packaged butter 45°F, packaged tofu 45°F raw chicken 46°, 46°, lo mein noodles 46°, 47°, linguini noodles 47°, quinoa 47°, cooked black rice 46°, cooked pork 46°, shrimp 46°, raw steak 47°. By end of inspection about an hour later, only the following items had dropped in temperature: raw steak to 46°, lo mein noodles to 45°, 46°, linguini noodles to 46°. Observed thermometer range on walk-in cooler during course of inspection go from 43 down to 40 to 46°F at end of inspection. Operator and manager stated the unit had recently been cleaned and the door was left open.
