- Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours
Observed three deep tightly covered pans of pizza burger meat in walk-in cooler which was prepared yesterday - cook said she took the meat out of the steam kettle at 10 am and held at room temperature, placed pans in walk-in cooler at 11 am still tightly covered. Average temperatures of meat in one pan were 44 degrees, average temperatures in second pan were 43 degrees, third pan all temperatures were below 40 degrees. Meat was discarded, corrected.

- Foods are cooled using appropriate methods
Observed salisbury steak patties cooling in deep pans, stacked in the pans, pans tightly covered and stacked on a cart in the walk-in cooler. After 15 minutes, patties were 115 to 126 degrees. Patties were removed from pans to cool on sheet pans in a single layer, uncovered. Corrected.
