- Storage and maintenance of wet and dry wiping cloths
Observation: No sanitizer bucket provided. Wet wiping cloths were laying on the counter. New wiping cloths are now stored in sanitizer.
- Handwashing sink equipped to provide water at a temperature of at least 100° F through a mixing valve or combination faucet.
Observation: Hanksink water does not reach 100 degrees in 15 seconds. Slow to warm up. Water heater may need to be adjusted or hot water booster needed.
- PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
Observation: All foods in island cooler had a temperature of 60 degrees. Manager checked the thermostat and noticed that it was set at the wrong temperature. This was checked at 3:00 and new product was put in the cooler at 2:30. Thermostat was corrected and product put in walk in cooler until proper temperature. Corrected for now but will re-check on 2-27-16.
- Stored frozen foods shall be maintained frozen
Observation: Small double freezer by fryer has a temperature of 32 degrees. Frozen food will frozen until cooked. Freezer needs to be repaired.

Observation: Numerous risk factors and 1 repeat violation.
- Material characteristics of non-food contact surfaces
Observation: Kick plate tiles falling off the wall by the handsink. Small wall is same area falling apart.
- Food temperature measuring devices are provided and readily accessible
Observation: Only probe thermometer provided. This too big to check the temperature of fish and nuggets. Will order thin tip thermometers.

Observation: Cut limes on counter without refrigeration. Limes were 67 degrees. Limes were thrown out and new cut limes are stored in a ice container.
